A hearty and flavorful beef stew cooked to perfection in the Instant Pot.
Ingredients:
- 2 lbs beef stew meat, cut into chunks
- 4 carrots, peeled and sliced
- 3 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Add salt and pepper to the beef stew meat
Set the Instant Pot to saut mode and brown the meat all over
Put in the minced garlic and chopped onion
Saut until the onions are soft
It's time to add the tomato paste, thyme, and rosemary
Deglaze the pot by adding beef broth and red wine
Add the potatoes and carrots, and season with more salt and pepper
Put the lid back on the Instant Pot and set it to high pressure
Cook for 35 minutes
Let the pressure drop naturally for 10 minutes, and then quickly let go of the rest of the pressure
Enjoy while hot!
