Ingredients:
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
In a bowl, combine olive oil, lemon juice and zest, minced garlic, chopped rosemary, chopped thyme, salt, and pepper
Place chicken breasts in a resealable plastic bag and pour marinade over them
Seal the bag and massage marinade into the chicken
Marinate in the refrigerator for at least 30 minutes or overnight
Preheat grill to medium-high heat
Remove chicken from marinade and discard excess marinade
Grill chicken breasts for 6-7 minutes on each side, or until internal temperature reaches 165F 75C and juices run clear
Remove chicken from grill and let rest for a few minutes before serving
Serve grilled lemon herb chicken with your favorite Paleo side dishes
