These mini bell peppers stuffed with olives are great for parties or as a tasty snack. They are great for any event because the sweet crunch of the peppers goes well with the creamy, flavorful filling.
Ingredients:
- 10 mini bell peppers, halved and seeds removed
- 1 cup cream cheese
- 1/4 cup chopped olives
- 1/4 cup grated Parmesan cheese
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions:
Preheat the oven to 375F 190C
In a bowl, mix together cream cheese, chopped olives, Parmesan cheese, minced garlic, chopped parsley, salt, and pepper until well combined
Stuff each mini bell pepper half with the cream cheese mixture
Place the stuffed peppers on a baking sheet lined with parchment paper
Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the filling is golden and bubbly
Remove from the oven and let cool slightly before serving
Garnish with additional chopped parsley if desired
Serve warm and enjoy!
