Ingredients:
- 3 cups shredded unsweetened coconut
- 1/2 cup coconut flour
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup dairy-free chocolate chips optional
Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a large mixing bowl, combine shredded coconut and coconut flour
Add melted coconut oil, maple syrup, vanilla extract, and salt to the bowl
Mix until well combined
Using a cookie scoop or your hands, form the mixture into small balls and place them on the prepared baking sheet
Bake in the preheated oven for 12-15 minutes, or until the macaroons are golden brown around the edges
If desired, melt the dairy-free chocolate chips in a microwave or double boiler
Drizzle the melted chocolate over the cooled macaroons
Allow the chocolate to set before serving
