Paleo Macaroons



Since they don't contain eggs, these delectable Paleo macaroons are appropriate for anyone who is allergic to eggs or is on an egg-free diet. They have a lot of coconut flavor and are sweetened with maple syrup.

Ingredients:

  • 3 cups shredded unsweetened coconut
  • 1/2 cup coconut flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup dairy-free chocolate chips optional

Instructions:

Preheat the oven to 350F 175C

Line a baking sheet with parchment paper

In a large mixing bowl, combine shredded coconut and coconut flour

Add melted coconut oil, maple syrup, vanilla extract, and salt to the bowl

Mix until well combined

Using a cookie scoop or your hands, form the mixture into small balls and place them on the prepared baking sheet

Bake in the preheated oven for 12-15 minutes, or until the macaroons are golden brown around the edges

If desired, melt the dairy-free chocolate chips in a microwave or double boiler

Drizzle the melted chocolate over the cooled macaroons

Allow the chocolate to set before serving
