Ingredients:
- 2 cups cooked black beans
- 1 cup cooked quinoa
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup nutritional yeast
- 1/2 cup vegetable broth
- 1 avocado, sliced for garnish
- Fresh cilantro, for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Add the onion, bell pepper, and garlic to a large skillet and cook them until they become soft
Put in corn, diced tomatoes, cumin, chili powder, paprika, salt, and pepper
The black beans should already be cooked
Use a stir to mix
Put the mixture in a casserole dish
Mix nutritional yeast and vegetable broth with a whisk in a small bowl
Spread this mixture out over the casserole
Place aluminum foil over the casserole dish and bake for 25 to 30 minutes, or until the food is hot all the way through
Take it out of the oven and let it cool down a bit before you serve it
Before serving, top with slices of avocado and fresh cilantro
