Perfect for warm weather, this Paleo Summer Minestrone Soup is flavorful and light. Full of fresh veggies and herbs, this dish is filling and healthy.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 bell pepper, diced
- 1 can 14 oz diced tomatoes
- 4 cups chicken or vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- Fresh basil leaves, for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add onion and garlic, saut until fragrant
Add carrots, celery, zucchini, yellow squash, and bell pepper
Saut until vegetables are tender
Stir in diced tomatoes, broth, oregano, basil, salt, and pepper
Bring to a simmer
Add chopped kale or spinach, cook until wilted
Taste and adjust seasoning if necessary
Serve hot, garnished with fresh basil leaves
