Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 8 oz gluten-free angel hair pasta
- 1/4 cup honey
- 1/4 cup gluten-free soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions:
Cook the angel hair pasta according to package instructions
Drain and set aside
In a small bowl, whisk together honey, soy sauce, lemon juice, and lemon zest
Set aside
Season the thinly sliced chicken breasts with salt and pepper
Heat olive oil in a large skillet over medium-high heat
Add minced garlic and cook until fragrant, about 1 minute
Add the seasoned chicken slices to the skillet and cook until browned and cooked through, about 4-5 minutes per side
Reduce heat to low and pour the honey lemon sauce over the chicken
Allow it to simmer for 2-3 minutes, stirring occasionally until the sauce thickens and coats the chicken
Serve the honey lemon chicken over cooked angel hair pasta
Garnish with chopped parsley before serving
